Our beef sticks are smoked in long casings, 300 lbs at a time, then cut into the 8-inch sticks you find in the package. During this process, the cut ends become our Beef Bites. Great snacks! I've been buying these for a while now and they are a big hit in our home. Delivery was quick and I love the 8oz bites as I can enjoy them and save the individual wrapped meats for visiting friends and family. I especially enjoy the enclosed notes from your daughters. Molds VERY quickly!

I've purchased the individually-wrapped sticks for while and have been happy with them. This is the first time I've tried the Beef Bites, and was dismayed to see that they molded when kept in an air-tight container (in dry, normal kitchen conditions) in just a couple of days. I had to throw out 75% of the bag, uneaten. I wish there were some kind of warning about how quickly to eat them and how briefly they could be kept before molding. Also, the cut of the beef bites were weird; they were very uneven and seemed like just the waste product of the other sticks. I would not repurchase.

I'm sorry to hear that you are unhappy with your Beef Bites purchase. If you order sticks in the future, put a little order note in and I will include a package of bites too.

Yes, they need to be refrigerated after opening otherwise they'll mold quickly. It is stated fairly large on the label, 'REFRIGERATE AFTER OPENING.' Just the oxygen in an airtight container is enough to cause mold to start growing if unrefrigerated. I'll add this statement to the product description as well to make it more clear.
